This easy to make Gluten Free Baked Lemon Pepper Chicken is not only delicious, but healthy at that.


  • 4 Boneless, skinless Chicken Breasts

  • 1/2 tsp Salt

  • 1/8 tsp Salt, set aside

  • 1 tbsp Extra Virgin Olive Oil

  • 1 medium Lemon, sliced thin

  • 2 tbsp Lemon juice

  • 1 tbsp Pure Maple Syrup

  • 2 tbsp Unsalted Butter, cut into pieces

  • 1 tsp Cracked Pepper


  • Preheat oven to 425° F
  • Sprinkle chicken evenly with 1/2 tsp salt
  • Heat oil in large oven proof skillet over medium-high heat. Add chicken, cook undisturbed until the underside is golden brown. Approximately 4 minutes
  • Flip chicken, arrange lemon slices around the chicken in the pan.
  • Transfer skillet to the oven. Bake until a meat thermometer inserted into the thickest portion registers 165° F, approximately 10 minutes
  • Transfer chicken to a platter
  • Add lemon juice and maple syrup to the skillet. Add butter, 1 piece at a time until it is melted. Stir in pepper and remaining salt.
  • Drizzle the sauce over the chicken.
