Baked oats are a more cake-like cousin of the popular muffin recipe.

Strawberry Banana Baked Oats

Apparently, when you blend oats with baking staples (such as baking soda and eggs) in a blender, the resulting batter is incredibly light, airy, and cloud-like.

After you scoop the batter into a loaf pan or ramekin, you can customize the batter by adding flavors like almond butter, blueberries, pumpkin, or cocoa before baking.

How to make strawberry banana baked oats in the microwave

Ingredients

  • ½ cup old-fashioned oats
  • 1 teaspoon granulated sugar
  • ¼ teaspoon baking powder
  • Dash of salt
  • ½ medium banana , mashed
  • 1 egg
  • 3 tablespoons milk (any kind)
  • ¼ teaspoon vanilla extract
  • 3 medium strawberries , diced

Instructions

  1. Coat a large, microwavable mug or small bowl with cooking spray. 
  2. Add oats, sugar, baking powder, and salt to the mug. Stir to combine.
  3. Add banana, egg, milk, and vanilla extract to oats. Stir until mixed in. Gently fold in strawberries.
  4. Microwave on medium power for 3-3 1/2 minutes, or until the center is mostly set. Let stand in the microwave for 1 minute.
  5. Serve immediately.
