Homemade pepper jack macaroni and cheese is the ultimate comfort food. It might even be more comforting than macaroni and cheese with Velveeta cheese sauce. It might seem like the recipe would be the same as making homemade macaroni and cheese… but it surprisingly isn’t.

Pepper jack macaroni and cheese is a wonderful twist on the classic dish. The addition of pepper jack cheese gives it a little spicy kick that goes great with your favorite beverage.

  • 1 lb Elbow macaroni

  • 1 stick Butter

  • 2 1/4 cups Half and half

  • 1 large Egg, beaten

  • 4 oz Cream cheese, room temperature

  • 2 cups Sharp cheddar cheese, grated

  • 2 cups Pepper jack cheese, grated

  • 1/2 teaspoon Smoked paprika

  • 1/4 teaspoon Dried parsley

  • 1/4 teaspoon Red pepper flakes

  • 1/4 teaspoon Onion powder

  • 1/4 teaspoon Mustard powder

  • 1/4 teaspoon Salt

  • 1/4 teaspoon Pepper


  • Set oven to broil. Spray casserole dish with cooking spray.
  • In large pot bring water to boil for pasta. Add pasta, cook for six minutes and drain.
  • Return to pot and add butter. Stir pasta to coat with butter.
  • In separate pot on low heat, add half & half and beaten egg. Whisk together. Add cream cheese and whisk while cheese melts.
  • Add 1 cup of each cheese and whisk until melted.
  • Add paprika, parsley, red pepper flakes, onion powder, mustard powder, salt and pepper. Whisk until smooth.
  • Add pasta to the cheese sauce, stir until the pasta is coated.
  • Spoon half the pasta into the casserole dish. Sprinkle 1/2 of remaining cheese on top. Spoon the remaining pasta in dish, and top with the remaining cheese.
  • Place in broiler until grated cheese is melted. Approximately 2-3 minutes. Remove from oven and serve.
